Immune-boosting Cordial

This period of enforced time at home, and of finding ways to reset our 'normal' routines, is undoubtedly fostering a renewed focus on health and wellbeing. As we look for support to help bring calm and reassurance, and to boost our immunity, there are many simple yet effective things we can easily try at home. We've been making and enjoying a delicious, immune-boosting cordial - from Jane, The Exmoor Herbalist.

ELDERBERRY CORDIAL
Elderberry cordial is a wonderful immune-boosting drink, and simple to make at home. Adding some other nutritive tonic herbs and spices makes for a powerful plant ally.
 
1 cup of dried Elderberries
2 Star Anise
1 Cinnamon stick
4 Cloves
1 piece Ashwaganda root
1 tsp Echinacea root
750 ml water
 
Place all the ingredients in a pan and simmer for 20 minutes. Remove from the heat and strain into a jug. Use the same amount of sugar as you have liquid, so 500ml liquid = 500g sugar. Return the liquid and sugar to a pan and simmer for 20 minutes. Cool and pour into a bottle, dilute with water to enjoy.
