Delicious Organic Zimbabwean Baobab Recipes

Keen to showcase some of the delicious things that can be created using our fantastic quality organic Zimbabwean Baobab, a few of our team members here at Organic Herb Trading got creative and prepared tasting samples for our stand at NOPE last week. Delicious, healthy and incredibly easy to make, we have shared two of our favourite recipes below.

ORGANIC ZIMBABWEAN BAOBAB BONBONS              
1 x cup Organic Cashews
½ cup B’Ayoba Organic Zimbabwean Baobab 
½ cup Organic Almonds
½ cup Organic Sultanas
Lemon zest (1 x organic lemon)
Lemon juice (1/2 organic lemon)
5 tbsp Light Fruit Syrup
¼ tsp Himalayan Pink Salt
1.    In a food processor, chop the nuts down to medium pieces, then add in the Baobab, salt and sultanas and process again until the sultanas are chopped up finely.
2.    Next add in the remainder of the ingredients and process down till fully combined and the ingredients come together to form a firm ‘dough’.
3.    Make into bite-sized balls and refrigerate to firm up.
Dust with Baobab so they resemble bonbons, and keep in an airtight container.
 
VEGAN BAOBAB & COCONUT FUDGE
1 can "Amaizin" organic coconut milk
1 pack Biona organic coconut cream
1 heaped measuring cup B'Ayoba Zimbabwean Organic Baobab 
2 teaspoons Biona rapadura sugar
Pinch of salt
Optional - melted dark chocolate drizzle
 
Line your baking tray with greaseproof paper.  Melt the coconut cream gently in a large-ish pan, add the coconut milk, once you have a smooth liquid add your sugar and salt, then add the Baobab powder!  Because of the pectin in the powder, it will instantly form into a thick paste - stir well with a spatula, spread out in the tray and leave to cool.  Drizzle melted chocolate over if you are so inclined.   Once fully cooled, place in the fridge for a few hours, then remove from the tray and cut into small squares. Keep refrigerated.
